Belly good bamboo dish wins

Bamboo Belly

Ingredients

Dried bamboo shoots (500g)

Pork belly (2kg)

Garlic (20 cloves)

Ikan bilis (250g)

Light soya sauce (150ml)

Dark soya sauce (2tbs)

Cooking oil (300ml)

Water (1l)

Salt (1/4 tsp)

White pepper (1/2 tsp)

Red chilly and parsley to garnish

Methods

Soak bamboo shoots in hot water two nights before cooking. Cube pork belly. Clean and boil pork belly in water under 60% cooked.
Drain pork but keep water for bamboo shoot stock. Marinate pork with salt and pepper for 30 minutes.
Deep fry pork till golden. Soak in light soya sauce immediately after.
Boil ikan bilis. Clean and thinly slice bamboo shoots. Fry garlic.
Add sliced bamboo shoots, salt and pepper. Transfer fried bamboo shoots to a big pot filled with combined ikan bilis stock, pork belly stock and light soya sauce used to soak the fried pork belly.
Add dark soya sauce to give a golden finish. Boil bamboo shoots until they are soft but still crunchy. Add pork belly to bamboo shoots and boil together before serving them as a complete dish.
Served with rice or steamed leaf buns and bread.

THE MAN WITH THE PURPLE CHILI

He is the purple chili man, our neighbourhood lau soo Mr Choo who, together with his mum and son, were our model family when we initiated our community project HandMeDown’s Great Cook-Off.
The Choo family happily played “guinea pigs” and welcomed us into their kitchen in Pek Kio (behind Pek Kio CC) where the ah ma made her famed ngoh hiang.
Ah Ma told us she knows one thing – that as a grandmother, her main job is to “sayang soon” (love your grandchildren).
Her son Mr Choo said his mum’s ngoh hiang “sometimes good, sometimes not so good”.
Mr Choo’s son, master Choo, immediately corrected his dad, “No, sometimes it is good, sometimes very good.”
Score 100 for Young Man Choo, way to go, lad, who luvs ya? Ah Ma!
Ah Ma runs one of the oldest TCM shops, started by grandfather in the Albert Street/Selegie area, decades ago, but they moved shop to Pek Kio, and although business isn’t like what it used to be, the Choo family keep the shop open because “just to see our mother’s face smile” is enough.
Friends come and go and stop to chitchat with Ah Ma who has a couple seats outside, in fact, next time you have cough, cold, or leg pain, she has a healing potion for you.
Back to the purple chili, Mr Choo grows them in pots, which used to be in front of the shop, but people kept stealing them, so now the pots have moved indoors.
We hope to share with you the secret of Mr Choo’s purple chili, can Singapore Purple Chili Curry be far behind?

The kitchen is the most important room in the house (or building).
And we had the complimentary use of three of the best CC kitchens islandwide.
Braddell Heights CC, Jurong Green CC, Marine Parade CC.
(For the two semi-finals and the finals.)
We’d like here to give a shout out to the people who led us to the free use of those wonderful kitchens, who knew your friendly neighbourhood CC would be equipped with such great amenities?
So thanks hor! The People’s Association (PA), Family Life (FLC), the very helpful and very nice Ivy Wong (BH), Kwok Kar Peck (JG), R Kanapaty (MP).
And to Mr Seah Kian Peng, MP Marine Parade GRC and advisor Marine Parade GRC & GROs, for his help towards the $500 cash voucher prizes from NTUC FairPrice Co-operative Ltd.
And to our friends Priscilla Soh (Cerebos), Jeffrey Goh (Fonterra), Grace Yeo (LamSoon), and Michelle Chew (L’Oreal/Kiehl’s) for their generous contribution to the goody bags.
All deeply appreciated.

Any three-member group can play, as long as you belong in three different age groups, the whole idea is to bond with each other, old learn new things from young, young learn to care for old and share with elders.
Your grandchorkong, your neighbour auntie, your foreign talent friend who wants to take part in local activities, your domestic helper, godchild, all can take part.
Simply bring a recipe, as long as one in the three can cook, the other two can try to help or havoc.
As long as it smells like team spirit!
Then you can win prizes, appear on online television and have your own youtube moment, and who knows, your treasured recipe could end up in a cookbook.

Clash of the Titans at Marine Parade on Wednesday 7th April when Jurong Green Team-family “Cooking Angels” of Madam Saedah faces Braddell Heights Jenny Chua Team.
MY LITTLE DUMPLING
Jenny Chua’s winning family, it runs in the family.
Did you know that Madam Yeo, Jenny’s 77-year-old mum won a dumpling contest almost 20 years ago?
No, not because her cheeks were smooth and round like dumplings, but the gentle lady won in a who-can-make-the-fastest-dumpling competition and she beat off the rest.
Well, Madam Yeo was only in her 50s then…

Madam Saedah’s Cooking Angels at the Finals

THE RICE QUEEN
First Madam Saedah Tahier entered HandMeDown’s Great Cook-Off with her young grandson, the boy with the many expressions, then the family thought, alamak, too young lah, so they tried to rope in granddaughter Najah who actually prefers fastfood.
How to get her to join the contest? Grandbapak had to “bribe” Najah with $50! After their nasi pelangi-rainbow rice took them into the finals, N was swopped for the grandson. Truly a family that bonds together! They eat breakfast every weekend together, on homecooked mee (siam, rebus, soto) or roti kirai.
What is roti kirai? Good question, we’ll be asking the bonding Cooking Angels for the recipe.

Minister Lim Boon Heng is guest of honour at Jurong Green semi-finals

Minister, Prime Minister’s Office, MP Jurong GRC, Adviser Jurong GRC GROs, was Guest of Honour at Jurong Green CC, semi-finals of HMD’s Great Cook-off.

SHUT UP! Paik Choo, Paik Choo, Paik Choo, don’t you know that wearing white adds on 10kg to a person’s body mass in photos?
Or is it a ploy so anyone next to you looks slim?
Eh, the Jurong Green CC kitchen got no flies, so no need to open your mouth to catch them!
How’s this for a brag-pic, meaning can boast of your picture with the Minister, cool.

We don’t mean no disrespect, but in the photo of the judges including Mr Eric Neo executive chef of Crowne Plaza Hotel Changi and Baba Jolly Wee well-known Peranakan chef, it looks like Mr Neo ate all of Mr Wee’s share of the food!

How Braddell Heights families beat off competition

Saturday March 20th
When Jurong Green CC heard of Braddell Heights CC’s participation in HandMeDown’s Great Cook-Off, they all said, “Braddell Heights is the best, they have many great cooks, they always have cooking lessons, all the men there know how to cook etc.”
All too true.
Just look at Simon Lim and his family – six children, give the man a medal, if not six! – and Kelvin Kai, the sharpest man about, with his pouch of serious cutting instruments.
And then there’s Alice Lim FLC (Family Life Champion), for whom BH CC is like her second home.
“I join everything, I am into flowers, line dancing, cooking, all!”
We went with her to the Jurong wet market and it was like going with an MP walkabout, everybody, every stallholder, knows Alice, what a wonderland of produce and people.
Next round we must get the other FLC Family Life Champion Tay Poay Kiang to enter, Poay Kiang prefers to be quiet and watchful.
